Baked chicken thighs with beans and glazed potatoes

Sage, with its origins in the Mediterranean region, has its name from Latin and means that it is capable of saving. Traditionally used as a medicinal plant because of its multiple healing properties. The use of sage as a condiment has the advantage of having an interesting amount of antioxidants that hinder oxidative damage to tissues, contributing to healing, skin health (also in cosmetic use) and even helping to maintain the health and functioning of the brain.

The oven:

Preheat the oven to 200ºC, heat above and below.

The chicken thighs:

Peel garlic and separate sage leaves from their branches.
Put sage leaves and garlic clove inside the chicken thighs, between the meat and the skin. Put on a baking tray and add a dash of olive oil. Season with salt and pepper. Bake 20-30 min (according to oven) until cooked. The chicken is done when the meat is no longer pink and the juice is clear.

The potatoes: I:

Place the potatoes in a pot and cover with cold water with a pinch of salt. Bring to a boil, cook for about 15 min.
During the last 9 min, add egg to be hard boiled.
Drain and set aside.  

The beans:

Cut the tips of the beans. In a pot, bring water with a pinch of
salt to a boil. Boil beans 10 min.
Drain and set aside. 

The potatoes II:

Cut potatoes in half. Heat oil in a frying pan and sauté potatoes and green beans with olive oil, balsamic vinegar and honey.
Season with salt and pepper.

Your meal:

Serve chicken thighs with glazed potatoes, green beans, and half an egg.
