Pre-heat the oven to 200ºC. Put rice, water and a pinch of salt in a pot. Chop garlic, ginger, scallions and coriander. Mix coconut milk, ginger, garlic, brown sugar, red curry and lime juice in a pot. Put the hake on a baking dish. The oven:
(If you do not have an oven, or do not want to use it, you can cook the hake in a frying pan.)The rice:
(2 cups of water for each cup of rice)
Bring to a boil and lower the heat to a minimum.
Boil covered 15 min until the rice has absorbed the water. Prepare the ingredients:
Squeeze lime. The sauce:
Simmer over low heat 8-9 min.
Turn off the heat and add coriander and scallions (reserving a little of both for the presentation later on).The hake:
Bake until opaque in the middle (10-20 min depending on your oven and the thickness of the fish).
Serve with rice and sauce. Sprinkle scallions and cilantro over it all.paso 6
