Oven baked hake filets in coconut red curry sauce

Hake is rich in complete proteins and contains different vitamins and minerals, most importantly the vitamins B. These vitamins, except B12, helps the body absorb and use energy nutrients (carbohydrates, fats and proteins). With a soft flavor and tender texture, it is a widely used fish in the Spanish cuisine. Here in an Asian fusion with flavors from Thailand.

The oven:

Pre-heat the oven to 200ºC.
(If you do not have an oven, or do not want to use it, you can cook the hake in a frying pan.)

The rice:

Put rice, water and a pinch of salt in a pot.
(2 cups of water for each cup of rice)
Bring to a boil and lower the heat to a minimum.
Boil covered 15 min until the rice has absorbed the water.  

Prepare the ingredients:

Chop garlic, ginger, scallions and coriander.
Squeeze lime. 

The sauce:

Mix coconut milk, ginger, garlic, brown sugar, red curry and lime juice in a pot.
Simmer over low heat 8-9 min.
Turn off the heat and add coriander and scallions (reserving a little of both for the presentation later on). 

The hake:

Put the hake on a baking dish. Season with salt and pepper and spread a little of the sauce on top.
Bake until opaque in the middle (10-20 min depending on your oven and the thickness of the fish).
Serve with rice and sauce. Sprinkle scallions and cilantro over it all.
