Pork tenderloin and portobello mushroom skewers

The tenderloin is a piece of meat located between the ribs and the loin of the cattle, it is of great quality and one of the most appreciated parts. It can be prepared in various ways, one of the most famous is the pork tenderloin in sauce but, whatever the method, it is considered an excellent piece, practically the king of meats. This is due to the lack of intermuscular tissue, making it so tender.

The rice:

Put rice, water, bay leaf and a pinch of salt in a pot.
(2 measures of water for each measure of rice). Bring to a boil and lower the heat to a minimum. Boil covered for 15 minutes until the rice has absorbed the water. Set aside and let rest covered. 

El arroz

Prepare the ingredients:

Cut onion into julienne. Cut cherry tomatoes into wedges. Chop celery and parsley.
Mix everything in a bowl. Season with salt and pepper and add a dash of olive oil and balsamic vinegar. Set aside.

The tenderloin:

Cut meat into smaller pieces to be put on skewers. Do the same with the portobello mushrooms. Season with salt and pepper. Assemble the skewers interspersing meat with mushrooms. 

To the frying pan:

Heat oil in a frying pan over medium heat and cook the skewers 5-7 min per side until golden brown and cooked through.
Press the meat with tongs or spatula. If it is too soft, it is needs more cooking. If it is very firm (almost hard), it has passed the point of doneness.  

Your meal:

Serve the skewers with basmati rice and salad.
