Vegetable protein burger with curry sweet potato and mango chutney

Vegetarian, or vegan, burgers represent a rapidly growing food segment because of increasing demand for plant-based products, owing to their health benefits and people’s concern for the environment. But no meat equals less flavour? Not at all. In this recipe we’ll use a veggie burger and accompany it with curried sweet potato and various sauces to keep your taste buds alert!

The sweet potato:

Preheat the oven to 225ºC, with heat from the top and bottom.

Peel and slice the sweet potato into rondelle, 1 cm thick.
Place in a bowl. Add a dash of oil and season with salt, pepper, and curry powder. Mix well.
Arrange on a baking tray (lined with parchment paper if you have it). Bake for 20-30 minutes until golden and tender when pierced with a fork.

Mise en place:

Wash and thinly slice the cucumber into rondelle.
Chop jalapeño. 

The garnishes:

In a bowl, combine cucumber with a dash of oil and as much jalapeño as you like (spicy!). Season with salt and pepper. Mix well.
In another bowl, mix half of the yogurt with a dash of oil. Season with salt and pepper. Mix well.
In a third bowl, mix the remaining yogurt with mango chutney. Mix well.

The burgers:

Heat a dash of oil in a frying pan over medium-high heat.
Cook the veggie burgers for 3-4 minutes on each side until fully cooked.
Pat the frying pan dry with a paper towel. 

The assembly:

Toast the buns in the frying pan with the cut side down.
Assemble your burgers with bun, veggie burger, mango sauce, and marinated cucumber.
Serve with curry sweet potato and seasoned yogurt.
