Preheat the oven to 225ºC, with heat from the top and bottom. Peel and slice the sweet potato into rondelle, 1 cm thick. Wash and thinly slice the cucumber into rondelle. In a bowl, combine cucumber with a dash of oil and as much jalapeño as you like (spicy!). Season with salt and pepper. Mix well. Heat a dash of oil in a frying pan over medium-high heat. Assemble your burgers with bun, veggie burger, mango sauce, and marinated cucumber.
