The oven:

Heat the oven to 200ºC.
Heat both above and below.

The potatoes:

Cut potatoes lengthwise on 1cm thick pieces.
Put them on a baking sheet and add a drizzle of olive oil, rosemary leaves, salt and pepper.
Bake 35-45 min until desired doneness.
Stir occasionally.

Mise en place:

Slice tomato.
Cut cheese in large square slices 1 cm thick.
Mix pesto and mayonnaise. Reserve. 

The halloumi:

Grill the cheese in the frying pan. There is no need to add cooking oil. 

Your burger:

Make the burger with mixed greens, tomato, creamy pesto sauce and grill cheese.
Serve with rosemary potatoes.
