Grilled hake with tomato stir-fry and oven baked potatoes

Straight from the Mediterranean Sea to your dinner table: fresh and tasty hake. Here we get to taste it with a touch of lime. To accompany this delight we prepare a tomato stir-fry, but adding Asian tones with fresh ginger, coriander and fish sauce.

The potatoes:

Pre-heat oven to 200ºC.
Cut potatoes in half and place on a baking tray. Add a dash of olive oil and season with salt.
Cook for 25 min or until crispy and cooked through.

Mise en place:

Chop onion, garlic, coriander and tomato.
Peel and grate ginger.  

The stir-fry I:

Heat up a dash of oil in a pan and sauté onion and garlic for 5 min.
Add tomato and condiment with salt and pepper.
Lower the heat and let simmer for 15 min.
If it dries out, just add a spoon of water now and again. 

The hake:

Heat a dash of olive oil in a frying pan on medium heat. Place the hake in the pan with skin side down.
Cook 2 min, condiment with salt and pepper.
Turn over and squeeze the lime on top.
Remove from heat.

The stir-fry II:

Add ginger, fish sauce (it is strong, so regulate according to your liking) and half of the coriander to the sauce.
Serve hake with potatoes, tomato stir-fry and sprinkle chopped coriander on top.
