Teriyaki stir-fry with rice noodles and crispy tofu

The noodles:

Boil noodles in plenty of water with a pinch of salt for 8 minutes. Drain and set aside in cold water (if there is still some time before the final step of the recipe).

Mise en place:

Cut broccoli into florets.
Matchstick-cut carrot.
Cut onion into julienne.
Grate or finely chop garlic. 

The tofu I:

Slice tofu and press each slice between two sheets of kitchen paper to remove excess liquid. Break tofu into pieces in a bowl with your hands. Add the spice mix and mix well with your hands to coat all the tofu pieces. 

The tofu II:

Heat sesame oil in a frying pan. Fry tofu until golden and crispy on all sides, approximately 8 minutes. If more oil is needed, you can use any oil you have at home. Set aside on a plate.

The wok I:

In the same frying pan, heat a dash of oil and stir-fry broccoli, carrot, and onion until golden.
Approximately 4-5 minutes. Add garlic. 

The wok II:

Make space in the frying pan on one side. Break the egg there and scramble it.
Add tofu and noodles to the pan and stir everything.
Add teriyaki sauce and mix well.
Divide among plates. Your dinner is ready.
