Steaks and warm salsa verde with roasted sweet potato and broccoli

The sweet potato arrived in Europe in the sixteenth century and from there it spread throughout the world due to its high nutritional value and good taste. LetsCook roasts it with broccoli to accompany the steak that adopts an aromatic and round flavour with the salsa verde made with lemon, garlic, shallots and parsley. A seasonal dish full of energy.

Mise en place:

Heat the oven to 225ºC, heat above and bellow.

Peel and cut the sweet potato into 1cm cubes.
Wash and cut the broccoli into small bouquets.
Put everything on an oven tray. Add oil, salt and black pepper.
Bake 20-30 minutes in the middle of the oven.

The salsa verde:

Grate the skin of the lemon, then squeeze the lemon.
Chop the parsley. Mix everything with salt and pepper. Set aside.
Mince shallots and garlic. Set aside. 

Remember to stir the sweet potato and broccoli! 

When there are only a few minutes left until the sweet potato is ready, we start with the meat:

Heat oil in a frying pan. Fry the meat over medium / strong heat until the desired point of doneness.
When done, set aside on a plate away from heat. 

The sauce:

In the same pan (without cleaning it) add a little more oil, shallots and garlic. Fry until golden brown.
Turn off the heat. Add the parsley and lemon mixture to the pan. Stir and mix with Sambal Oelek (spicy – you deicide how much!). 

If you want to, cut the meat into strips:

Serve the meat with the sweet potato, broccoli and salsa verde.
