Vegetable Gnocchi in Manchego cheese sauce

Gnocchi is a traditional dish from northeast Italy that has since spread to other regions. In the 19th century the feudal lords, owners of the mills, increased the rates for milling wheat. Prepare the ingredients:

Bring salty water to a boil. In the meantime:

Cut zucchini in halfmoons, tomatoes in half, and pepper into strips.
Slice garlic and grate cheese.

The stir-fry:

Heat oil in a frying pan and sauté zucchini 2-3 min until golden.
Add pepper and garlic. Season with salt and pepper.
Sauté 2-3 more minutes.
Add tomatoes and turn off the heat. 

The gnocchi:

Boil the gnocchi. When they float, they are ready (2-3 min).
Drain but reserve a glass of the cooking water.  

The finishing touch:

Add gnocchi, half the cheese, butter and half a glass of the cooking water to the frying pan with the vegetables. Cook 1-2 min stirring vigorously.
The result will be a creamy sauce. If you want to regulate the consistency, use the cooking water.
Serve with grated Manchego cheese on top.
