Mince garlic. Heat a good splash of oil in a frying pan and sauté onion over medium heat. It should soften before turning brown. Let simmer 15-20 min until caramelized and crisp around the edges. In a pot, place garlic, bay leaf, cumin, rice and water (2 cups of water for each cup of rice). Season with salt and pepper and cover. Bring to a boil. Lower the temperature to a minimum and let simmer for 10-15 min, until the water has been absorbed. Add lentils and mix well. Place rice on your plate as a base, top with caramelised onion.
