Mujadara - lentils and rice with herbs and caramelised onion

The first recorded recipe for mujaddara appears in Kitab al-Tabikh, a cookbook compiled in 1226 in Iraq. Containing rice, lentils, and meat, it was served this way during celebrations. Without meat, it was a medieval Arabic dish commonly consumed. Because of its importance in the traditional diet, a saying in the Eastern Arab world is, “A hungry man would be willing to sell his soul for a dish of mujaddara.” #Arabic #Vegetarian

The vegetables:

Mince garlic.
Cut onion into julienne.
Cut scallion at an angle or chop them.
Chop coriander (leaves and branches).
Drain lentils.

The onion:

Heat a good splash of oil in a frying pan and sauté onion over medium heat. It should soften before turning brown. Let simmer 15-20 min until caramelized and crisp around the edges. 

The rice:

In a pot, place garlic, bay leaf, cumin, rice and water (2 cups of water for each cup of rice). Season with salt and pepper and cover. Bring to a boil. Lower the temperature to a minimum and let simmer for 10-15 min, until the water has been absorbed. Add lentils and mix well. 

Your meal:

Place rice on your plate as a base, top with caramelised onion. Finish the meal with a sprinkle of coriander and scallion. Serve with yoghurt and sriracha (spicy).
