Preheat the oven to 175°C (using convection) or 200°C Heat a splash of oil in a frying pan. In a bowl, combine evaporated milk, garlic, curry, sambal oelek (spicy! adjust to your liking), and mango chutney. Pour the mixture over the chicken. Put rice, water, and a pinch of salt in a saucepan (use 2 measures of water for each measure of rice). Bring it to a boil and then reduce the heat to the lowest setting. Simmer covered for 12-15 minutes or until the rice has absorbed the water. Prepare broccoli by cutting it into florets. Present the chicken gratin alongside basmati rice and sautéed broccoli.
