Mis en place:

Preheat the oven to 175°C (using convection) or 200°C
(conventional).

Cut bell pepper into strips and onion into wedges.
Chop garlic.
Cut each chicken fillet into 3-4 long pieces of similar size.

To the frying pan:

Heat a splash of oil in a frying pan.
Sear the chicken for 3 minutes, turning to seal all sides.
Season with salt and pepper.
Add the bell pepper and onion. Sauté for an additional 2 minutes.
Transfer everything from the pan to an appropriately sized
ovenproof dish for the amount of chicken (not too large).

To the oven:

In a bowl, combine evaporated milk, garlic, curry, sambal oelek (spicy! adjust to your liking), and mango chutney. Pour the mixture over the chicken.
Bake for around 20 minutes, until the chicken is thoroughly
cooked.

The rice:

Put rice, water, and a pinch of salt in a saucepan (use 2 measures of water for each measure of rice). Bring it to a boil and then reduce the heat to the lowest setting. Simmer covered for 12-15 minutes or until the rice has absorbed the water.
Turn off the heat and set aside (covered). 

The broccoli:

Prepare broccoli by cutting it into florets.
Heat a splash of oil in a frying pan.
Sauté the broccoli for 3-4 minutes.
Season with salt and pepper. 

Your meal:

Present the chicken gratin alongside basmati rice and sautéed broccoli.
