Put quinoa, water and a pinch of salt in a pot. Dice carrots and thinly slice shallots and scallion (save some of the green part for garnish). Heat up a dash of oil in a wok or skillet. Sauté carrots, shallots and scallion whites until a bit brown (5-6 min). Season with salt. Beat the egg. The quinoa:
(2 cups of water for each cup of quinoa)
Bring to a boil and lower the heat to a minimum.
Boil covered 15 min until the quinoa has absorbed the water.Mis en place:
Mince garlic and ginger. To the frying pan:
Add garlic and ginger. Fry for another 2 min.
Mix in the quinoa and fry until it begins to toast, 3min.
Stir in soy sauce, sesame oil and sriracha.The egg:
Push quinoa to the side to create some room.
Pour egg onto the frying pan and cook, stirring gently, until nearly set.
