Quinoa “fried rice” with shallots and carrots

Apart from being a superfood with one of the longest lists of health benefits, quinoa is also very easy to use once you get to know it. You can easily prepare quinoa in advance and store it without becoming stale or dry like rice do. Mix it up with some fresh berries in your breakfast bowl, use it in your salad or like here: fried rice... but with quinoa!Meal rich in protein and vitamins.

The quinoa:

Put quinoa, water and a pinch of salt in a pot.
(2 cups of water for each cup of quinoa)
Bring to a boil and lower the heat to a minimum.
Boil covered 15 min until the quinoa has absorbed the water.

Mis en place:

Dice carrots and thinly slice shallots and scallion (save some of the green part for garnish).
Mince garlic and ginger.

To the frying pan:

Heat up a dash of oil in a wok or skillet. Sauté carrots, shallots and scallion whites until a bit brown (5-6 min). Season with salt.
Add garlic and ginger. Fry for another 2 min.
Mix in the quinoa and fry until it begins to toast, 3min. 
Stir in soy sauce, sesame oil and sriracha.

The egg:

Beat the egg.
Push quinoa to the side to create some room.
Pour egg onto the frying pan and cook, stirring gently, until nearly set.
Toss the fried quinoa with the eggs.

Your meal:

Garnish with green part of the scallion and serve immediately.
