The rice I:

In a pot, combine rice with the double amount of water (1 cup rice + 2 cups water) and a pinch of salt.
Cook at low heat for 12-15 minutes, or until the water has been absorbed.

The eggs:

Place the eggs in a pot and cover with water.
Bring to a boil and boil for 8 minutes. 

Mise en place:

Peel and cut carrot, onion and egg into small cubes.
Tofu as well.
Chop chives and garlic.
Cut chili at an angle.
Cut the lime in half. 

The rice II:

Heat oil in a frying pan and sauté onion, tofu, chili (hot = optional), garlic and carrot.
Add rice, egg and sauté some more.
Add soy sauce and sauté everything well over high heat.

Your meal:

Serve with a sprinkle of chives. Squeeze a little lime on top to give it a touch of freshness.
