Heat the oven to 225ºC, heat above and bellow. Grate the skin of the lemon, then squeeze the lemon. Remember to stir the sweet potato and broccoli! Heat oil in a frying pan. Fry the meat over medium / strong heat until the desired point of doneness. In the same pan (without cleaning it) add a little more oil, shallots and garlic. Fry until golden brown. Mise en place:
Peel and cut the sweet potato into 1cm cubes.
Wash and cut the broccoli into small bouquets.
Put everything on an oven tray. Add oil, salt and black pepper.
Bake 20-30 minutes in the middle of the oven.The salsa verde:
Chop the parsley. Mix everything with salt and pepper. Set aside.
Mince shallots and garlic. Set aside. When there are only a few minutes left until the sweet potato is ready, we start with the meat:
When done, set aside on a plate away from heat. The sauce:
Turn off the heat. Add the parsley and lemon mixture to the pan. Stir and mix with Sambal Oelek (spicy – you deicide how much!).If you want to, cut the meat into strips:
