Pasta salad caprese with chicken, fresh plums and lemon dressing

The caprese salad is a classic. Here we get the chance to enjoy it with exquisite Monterosa tomatoes - very meaty and tasty. And, at the same time we throw in some plums that happen to be in season right now. They add both color and balance to the creation. Meal rich in vitamin C and protein.

The pasta:

Boil the pasta in plenty of water with a pinch of salt, 10 min until al dente.
Drain and pass through cold water.
Set aside.

The chicken:

Season the chicken breasts with oregano, salt and black pepper on all sides.
Fry 5-8 min / side (depending on size).
Set aside.  

The dressing:

Squeeze lemon and mince garlic.
Mix lemon juice, garlic, a dash of olive oil, salt and black pepper.
Stir well. 

Mise en place:

Cut tomato, plum and mozzarella into similar pieces. 
Separate the basil leaves from its branches.  

Make your salad:

Mix the pasta with the dressing.
Incorporate mozzarella, plum, tomato and basil.
Cut the chicken into medallions and serve on top.
Enjoy!
