Pork tenderloin medallions with mashed potatoes and green beans

This is a quick and easy pork tenderloin recipe with high returns for very minimal effort. We’ll sear it until golden, then we’ll add an incredible Honey Mustard Sauce that’ll give you a piece of meat sticky on the outside and juicy on the inside!

The potatoes:

Bring water with a pinch of salt to a boil.
Peel potatoes and cut into pieces.
Boil potatoes until tender by piercing with a fork.
Drain and set aside (covered).
(While the potatoes are boiling, continue with the recipe.)

1 - Las patatas - Medallones de solomillo

The beans:

Bring water with a pinch of salt to a boil.
Wash beans and remove the tips.
Add them to the water when it is boiling and wait until it boils again. Remove from the heat and leave in the water for 3 min. Drain and set aside in the pot (covered).

The pork tenderloin:

Cut pork tenderloin into 3 cm medallions. Smash the medallions with eg the bottom of a glass to flatten them a bit.
The glaze: In a small bowl mix mustard, soy sauce and honey.

To the frying pan:

Heat a dash of oil in a frying pan and fry the pork tenderloin over medium heat until cooked, about 4-5 min. Season with salt and pepper.
Just before you finish cooking the pork tenderloin, add the glaze and soak the meat. Cook for just amoment and turn off the heat.

The mashed potatoes:

We make the mash in the pot of potatoes. Mix butter and a pinch of salt with the potatoes. (If you have at home you can add a dash of milk for a creamier result.)
Mash with a fork or hand blender. 

Your meal:

Serve glazed pork tenderloin with mashed potatoes and green beans.
