The rice:

Put rice, water and a pinch of salt in a pot.
(2 cups of water for each cup of rice)
Bring to a boil and lower the heat to a minimum.
Boil covered 12-15 min until the rice has absorbed the water.
Tip onto a large tray and spread out into a thin layer to steam and cool.

The cucumber:

Peel cucumber and slice lengthwise. Take out the seeds with a spoon. Cut in halfmoons. Mix with rice vinegar and sugar. 

Mis en place:

Peel onion, garlic and ginger. Finley chop it all.
Slice beans at an angle.
Chop chives.
Cut chicken in small cubes. 

To the frying pan:

Stir fry onion, garlic and ginger with a dash of oil, 3-4 min. Add chicken and beans. Fry until the chicken is almost done. Add rice. Continue cooking until heated through.
Incorporate ketjap manis and sambal oelek, turn off the heat.
Season with salt and pepper. 

The finishing touch:

Fry the eggs on high heat so the whites really bubble up and get crispy. Season with salt.
Top each portion of rice with an egg. Scatter over chives and serve with cucumber pickle on the side.
