Preheat the oven to 180ºC, heat above and below. Place eggs in a pot and cover with water (set aside one without boiling for later use). Bring to a boil and cook for 8 minutes. Drain and set aside. Cut pepper, carrot, and onion into brunoise (very small dice). Place the potatoes in a pot and cover with water. Heat a dash of oil in a frying pan. Peel and cut potatoes into cubes.The mashed potatoes:
Add a pinch of salt and boil until tender when pierced with a fork, approximately 12-15 minutes.
