Spinach stuffed chicken breasts with smashed potatoes and cream cheese

Chicken Cordon Bleu is a dish that is well known to many Americans. The dish consists of thin slices of ham and cheese rolled inside a filleted chicken breast. It became popular on many American restaurant menus in the second half of the 20th century. From there, there have been many versions of stuffed chicken breasts, here with spinach.

The vegetables:

Pre-heat oven to 200ºC.

Boil the potatoes until tender when pierced with a fork, about 15 minutes.
Drain and smash the potatoes with a glass.

Chop coriander and mix with cream cheese. Season with salt and pepper.

The chicken:

Spread chicken fillets on a cutting board. Season with salt and pepper.
Top the fillets with cheese and spinach.
Roll them like wraps. Secure with toothpicks.
Cook the rolls in a frying pan with a dash of oil. 

To the oven:

Heat the oven to 220ºC.
When the chicken is ready, let it rest for a few moments. Slice each chicken wrap in several small rolls and place on a baking sheet next to the smashed potatoes. Spread the cream cheese mixture on top of the potatoes.
Gratinate a few minutes until it takes color.
Quicker option: Brown all in a frying pan in case you wish not to use the oven.

The salad:

Separate lettuce leaves.
Slice tomato.
Cut onion into julienne.
Mix lettuce, tomato and the amount of onion you want to add.
Dress with olive oil. Season with salt and pepper. 

Your meal:

Serve the chicken rolls with gratinated potatoes and salad.
