Chicken tikka masala with coconut milk

The Tikka Masala is said to be a British Indian dish. It is more popular outside India than within. Today we share this recipe based on coconut milk to enjoy these magnificent oriental flavours.

Prepare the ingredients:

Cut onion into julienne.
Chop half of the cilantro.
Squeeze lime. 

Mise en place - Pollo Tikka masala

The chicken:

Cut chicken breasts in half.
Season with salt and pepper. 

Let´s cook:

Heat oil in a pot and seal the chicken on both sides.
Set aside.
Brown the onion over low heat and add the chicken.
Add coconut milk, lime juice, spice mix (Tikka masala, Turmeric, Ginger), and the coriander stems (not chopped). Salt and pepper.
Let simmer covered over low heat for 20 min. 

The rice:

Put rice, water and a pinch of salt in a pot.
(2 cups of water for each cup of rice)
Bring to a boil and lower the heat to a minimum.
Boil covered 10-15 min or until the rice has absorbed the water.

Your meal:

Serve your chicken tikka masala with rice and chopped coriander on top.
