Prepare the ingredients:

Slice shitake.
Mince onion, garlic, ginger and chop parsley and scallion.
Dice tofu and cut peppers in quarters.

Bring to a boil:

In a big pan: sauté ginger, garlic and onion in sesame oil. 3-4 min.
Add vegetable stock, shitake, soy sauce and 1 liter of water per dice of stock.
Let simmer for 30 min under lid. 

The noodles:

Boil the noodles as pasta, 4 min.
Drain and set aside. 

To the frying pan:

Fry tofu, set aside.
Fry peppers, set aside.  

Make your ramen:

Remove broth from fire and add miso paste. Stir well.
Serve broth in a bowl and add noodles, tofu, peppers, scallion and parsley on top.
