Chipotle meatball tacos with lime yoghurt dressing

Chipotle chili is known in Mexico as a chili that has been left to ripen and dry and then being smoked. Once smoked, these acquire a wrinkled texture and a reddish brown color. Chipotles, being dry and smoked chilis, keep for much longer without losing their flavor. In this recipe we will enjoy them in the form of a hot sauce.

The meatballs I:

In a bowl mix minced beef with chipotle (adding the amount to your liking since it is a hot sauce). Season with salt and pepper.
Shape meatballs with your hands. If the meat gets sticky, run your hands through cold water before touching the meat.

The yoghurt dressing:

Chop garlic and coriander.
Mix garlic and half the coriander with yoghurt. Add salt, pepper and squeeze lime on top. Stir well and set aside.

Prepare the ingredients:

Cut onion and pepper into julienne.
Cut tomato into cubes.
Grate cheddar cheese. 

The meatballs II:

Cook the meatballs on all sides in a frying pan with a dash of oil, approx. 5min. Once cooked set aside.
Heat another dash of oil and sauté onion and pepper over high heat with salt and pepper, once the vegetables are soft, add tomato, sauté 5 more minutes. 

Your tacos:

Arrange the tortillas, put sautéed vegetables, meat on top and finish with yogurt dressing and cheddar cheese. Sprinkle with cilantro.
