Oriental-style tofu with spiced tomato cream and rice

Oriental style recipes are famous for its spices, in particular when we talk about Indian cuisine. For a long time spices have played a vital role in domestic as well as industrial kitchens. In the beginning spices were used as preservative agents as bacteria cannot survive in the hot environment some spices provide, therefore it is natural that spicy recipes generally originates from the warmer regions of the world. However, nowadays we use spices mainly for flavouring and colouring.

The rice:

In a pot, place rice with water and a pinch of salt (2 cups of water for each cup of rice). Put the lid on and bring to a boil. Lower the temperature to a minimum and let simmer until the water is absorbed, about 12-15 min. Turn off the heat and set aside with the lid on.

The tofu:

Dice tofu.
Heat oil in a frying pan. Sauté tofu until golden.
Season with half the spices. Add salt and pepper. Set aside.

The vegetables:

Squeeze half the lime, cut the other half into wedges.
Cut zucchini and bell pepper into small cubes.
Peel and mince ginger. Chop coriander (leaves and branches).

To the frying pan:

Heat oil in a frying pan. Add ginger and sauté 30s.
Add zucchini and red pepper. Season with salt and pepper. Sauté until tender, 5 min approx.
Add tomato sauce, rice cream and the remaining spices. Let simmer over medium heat 3-5 min until  hicker. Add tofu and lime juice. Boil 1-2 min. Taste and add more salt if necessary.

Your meal:

Serve you oriental style tofu curry with basmati rice and lime wedges to squeeze over. Finish with a sprinkle of chopped coriander on top.
