Vegetarian tofu burger with brioche and guacamole

Tofu is of oriental origin. It is prepared with soy, water and coagulant. It stands out for its nutritional value of soy protein and its ability to reduce blood cholesterol, among other benefits. It is prepared by coagulating the so-called “soy milk” and pressing it later to separate the liquid part from the solid, in a similar way to how cheese is prepared from milk. Today battered with panko as a vegetarian burger.

Cooking step by step

Mis en place:

Cut tomato into small cubes and onion into julienne.
Cut lime in half and squeeze it.
Peel avocado and mash with a fork.
Slice tofu. 
Chop coriander.

The tofu:

Dish 1: Cornmeal.
Dish 2: Mix mayonnaise (save some for the bread at the end) with a dash of water until smooth.
Dish 3: Mix panko with sesame seeds.
Pass tofu through cornmeal, then through mayonnaise and panko with sesame to finish. 

The onion:

Place onion in a bowl.
Add salt and lime juice. Mix well.
Set aside. 

The guacamole:

In a bowl mix avocado, tomato and cilantro.
Season with salt. 

To the frying pan:

Heat oil in a frying pan.
Add the battered tofu slices and cook on both sides for approx. 1-2 min. 

The burger:

Add guacamole to the base of the bread.
Add tofu, mayonnaise, some more guacamole and onion.
