Gnocchi with spinach and gorgonzola sauce

The gorgonzola cheese was first documented more than a thousand years ago. This makes it the oldest cheese in Italy and one of the oldest in the world. It is believed to have its origins near Milan. Its fame has remained, and it is now one of the most beloved and well-known cheeses. We use it both when cooking but also to enjoy it just as it is. Today in combination with pear to flavour a plate of gnocchi. #Vegetarian

The sauce:

Mince garlic.
Peel pear and cut into small cubes.
Heat the butter in a frying pan. Sauté pear and garlic for 5 min over medium heat.
Add gorgonzola and evaporated milk. Cook over low heat until the cheese dissolves. Season with salt and pepper. 

La salsa - Gnocchi con espinacas

The gnocchi:

In a pot, bring water with a pinch of salt to a boil.
Add gnocchi and cook until they start to float. Drain and turn off the heat.
Add gnocchi and spinach to the frying pan with the sauce. Stir well.

Your meal:

Serve gnocchi and decorate with walnuts and grated Parmesan.
