Strip steak with lemony mashed potatoes and shallots

Prepare the ingredients:

Grate lemon peel and squeeze half of the lemon.
Peel and slice shallots.
Cut the ends of the beans, then chop the beans.
Peel and dice potatoes.

The potatoes:

In a pot: Cover potatoes with water with a pinch of salt in it. Boil covered, over medium-low heat, 15 min. 3 min before the time is up, add the beans. 

The meat:

In a frying pan, fry the meat until the desired doneness.
Season with salt and pepper.
Set aside, on a cutting board, 3-5 min before slicing.
Do not clean the pan. 

The gravy:

In the same pan, sauté shallots. When they are transparent, add wine and boil until only half the amount of liquid remains.
Turn off the heat and add butter. Stir until everything is incorporated.

The mash:

When the potatoes are done, drain and add lemon zest and juice. Season with salt and pepper.
Mash with a fork (with the bits of beans inside).
Serve the steak with mashed potatoes and the shallot sauce.
