Chickpea and cauliflower bowl with pearl couscous

Today a recipe with a not so common ingredient: pearl couscous. The grains are larger in size than the “normal” couscous we know. Its texture is also more chewy and smooth, which makes it seem like something very different from traditional couscous. It is also known as ptitim. It is an oven roasted wheat pasta.

The oven:

Preheat the oven to 200ºC. Heat above and below.

The vegetables:

Cut cauliflower into small florets.
Chop coriander.
Squeeze half of the lime. 

To the oven:

Spread cauliflower and chickpeas on an oven tray.
Add a dash of olive oil, sumac, and season with salt and pepper.
Mix and bake 15-20 min until toasted.
Stir occasionally.

The dressing:

In a bowl, mix feta cheese, cream cheese, and lime juice. 

The couscous:

Cook the pearl couscous like pasta in salted water until tender, about 10 min. Drain and add coriander (reserving a little for garnish).

Your bowl:

Mix vegetables and couscous in a bowl.
Finish with chopped cilantro, lime juice, and cheese dressing on top.
