Grill cheese and lentil bowl with cherry tomatoes and spinach

The oven:

Pre-heat oven to 200ºC, heat above and below.

The tomatoes:

Put tomatoes on an oven tray. Add a dash of olive oil and season with salt and pepper.
Bake in the oven for 8-10min.

The vegetables and the cheese:

Chop onion, chives and garlic.
Slice cheese. 

To the pot:

Heat oil in a pot and sauté onion and garlic for 5 min.
Add balsamic vinegar and boil for a minute. Add lentils with its liquid and vegetable stock.
Let boil for 4min apdox. Add a bit of water, 1/2 cup aprox. Add spinach and let simmer for 3 min. Season with salt and pepper. Add tomatoes and set aside.

The cheese:

Fry cheese slices in a frying pan without oil. Serve with the lentil stew and cruotons. Sprinkle chives on top.
