Chicken bowl with quinoa and sweet potato

Quinoa can be considered magical because it is full of properties with amazing benefits for our body. It contains more protein than any other cereal and its carbohydrates are complex, that is, they are more satiating and can maintain our energy levels for longer than simple ones. The quinoa:

Bring two parts of water (with a pinch of salt) for one of quinoa to a boil in a pot. Boil covered over minimum heat for 15 min approx until it has absorbed the water.

The sweet potatoes and the eggs:

In another pot, bring water to a boil, add a pinch of salt.
Peel and cut sweet potato into 2cm cubes and boil for 10 minutes approx. Remove sweet potato from the water with a slotted (or table) spoon.
Boil eggs 9 min in the same water.
Drain and run through cold water. Peel and cut in half. 

The carrot:

Peel and cut carrots into matchsticks.
Heat a dash of oil in a frying pan. Sauté carrot until softened.
Season with salt and pepper and set aside.  

The chicken:

Cut chicken breasts into strips. Sprinkle with olive oil. Season with salt and pepper.
In a deep dish, mix sesame seeds, sweet paprika and breadcrumbs.
Cover the chicken pieces with the mixture.
Fry in the same fyring pan as the carrots.

The sauce:

Mix mayonnaise with soy sauce. 

Your meal:

Cut cherry tomatoes in half.
Divide quinoa between bowls, or deep dishes, in which you will serve your meal. Place the various ingredients on top (separated), finish with the sauce.
