Chicken and brown rice bowl with carrot and cabbage salad

White cabbage contains a lot of vitamin A, important to protect vision; and potassium, an important mineral for strengthening of the muscles. When consumed, cabbage works together with bile acids in the digestive process, together they eliminate bad cholesterol from the blood. Here served in a fresh salad that accompanies this extremely healthy and delicious dish. Meal rich in vitamin A, fiber and protein.

The chicken:

Fry the chicken 6-7 min per side, or until cooked through. Season with salt and pepper.
(Meanwhile, continue with the other steps.)
When done, using two forks, carefully shred into bite sized pieces.

The rice:

Put rice, water and a pinch of salt in a pot.
(2 cups of water for each cup of rice)
Bring to a boil and lower the heat to a minimum.
Boil covered 20 min until the rice has absorbed the water.

Prepare the ingredients:

Cut out and discard the core of the cabbage; thinly slice the leaves. Peel and grate carrots. Quarter lime.
In a bowl, combine the cabbage, carrots and the juice of half the lime. Drizzle with olive oil and season with salt and pepper. Mix well and set aside.
Quarter tomatoes.  

The sauce:

Combine vinegar, ponzu sauce, sesame oil, and as much of the sambal oelek as you’d like (spicy). Season with salt and pepper.

The finishing touch:

Mix the rice with half of the sauce.
Serve you rice topped with cabbage salad, tomatoes and chicken. Drizzle with the remaining sauce and serve with a lime wedge on the side.
