Preheat oven to 200ºC, heat above and below. Place carrot, pepper and aubergine on a baking sheet (on parchment paper if you have) without mixing them. Season with salt and pepper and add a dash of olive oil. While the vegetables are in the oven, we’ll boil the rice. Put water in a pot and add a teaspoon of salt. Bring to a boil and add the broccoli. Cook 5 min or until tender. Peel and cut carrot into cubes.
Cut pepper and aubergine into cubes.
Cut broccoli into small florets.
Cut goat cheese into slices or cubes.To the oven:
Bake for about 20 minutes or until tender.
Place cheese on a baking dish and bake until golden.The rice:
Place 2½ parts of water for 1 of rice in a pot. Season with salt and pepper.
Cover and bring to a boil. Lower the heat and cook 15 min at least or until the water has been absorbed.The broccoli:
