Rice bowl with roasted vegetables and gratinated goat cheese

Brown rice is husked rice, from which only the outer shell or glume has been removed (which is inedible). It preserves the entire germ with the bran layer that surrounds it, which gives it a light brown color. It has more nutritional value than white rice because the bran contains many elements such as fiber, vitamins B1, B2, B3, iron, magnesium, calcium and potassium. #Vegetarian

Mise en place:

Preheat oven to 200ºC, heat above and below.

Peel and cut carrot into cubes.
Cut pepper and aubergine into cubes.
Cut broccoli into small florets.
Cut goat cheese into slices or cubes.

To the oven:

Place carrot, pepper and aubergine on a baking sheet (on parchment paper if you have) without mixing them. Season with salt and pepper and add a dash of olive oil.
Bake for about 20 minutes or until tender.
Place cheese on a baking dish and bake until golden.

The rice:

While the vegetables are in the oven, we’ll boil the rice.
Place 2½ parts of water for 1 of rice in a pot. Season with salt and pepper.
Cover and bring to a boil. Lower the heat and cook 15 min at least or until the water has been absorbed. 

The broccoli:

Put water in a pot and add a teaspoon of salt. Bring to a boil and add the broccoli. Cook 5 min or until tender.

Your bowl:

Divide rice between plates and place vegetables, cashew nuts, fried onion and cheese on top as you like.
