Chana masala variation with vegetables and basmati rice

Chana masala is a typical dish of the North Indian cuisine. The main ingredient is chickpeas. It is a spicy dish, but in this version, we use soft spices. Chana masala is very popular mainly in Punjab and is widely consumed in north-western India, in the Gujarat and Sind regions. This all-vegan curry has the addition of crisp fresh vegetables. The spices flourish in the rich but light sauce. Enjoy! #VEGAN

The vegetables:

Chop onion and coriander.
Dice pepper and carrot.
Cut broccoli into small florets.

The curry:

Heat oil in a pot or skillet with lid. Add pepper, onion and carrot. Cook over low heat for about 5 minutes.
Season with spice mix, salt and pepper. Add tomato and cook covered for 15 min over low heat. Add broccoli, chickpeas, and half the coriander 5 minutes before finishing. 

The rice:

While the curry is cooking, prepare the rice.
In a pot, place rice with water and a pinch of salt. 2 measures of water for each measure of rice. Cover and bring to a boil. Lower the heat to a minimum and let simmer for 10-15 minutes or until the water has been absorbed.

Your meal:

Serve the curry with basmati rice. Finish with a sprinkle of coriander on top.
