Vegetable chili with quinoa and fresh herbs

Yes, you read correctly: it’s a chili WITHOUT meat. A healthy dish, balanced and full of flavors. As always with chilis you have total freedom to add the vegetables that you like the most. The quinoa:

Bring water and quinoa to a boil in a small pot. (2 cups of water for each cup of quinoa.) Let simmer at low heat under lid about 15 min, until the water has been absorbed.

Mis en place:

Cut onion in julienne.
Peel and slice carrots.
Chop garlic, pepper and tomato.
Pass the beans through water in a colander.
Chop the fresh herbs. 

The chili I:

Heat oil in a pot or large frying pan with lid.
Add onion, garlic, carrot and pepper. 
Fry 4-5 min until softened. 

The chili II:

Add tomatoes, vegetable stock (shredded), beans, spices and a glass of water. Season with salt and pepper.
Bring all to a boil and lower the heat.
Leave to boil under lid for 25 min.

Your meal:

Serve your chili with quinoa, fresh herbs, jalapeño and squeeze some lime on top.
