Pork chops with broccoli purée

Broccoli, a so-called superfood, is one of the vegetables with most health benefits. Broccoli is rich in vitamins A, K and group B, although vitamin C is its main source of benefits since a 100g serving provides 100 milligrams of this vitamin. In addition, it is very rich in minerals and fibre.

The potatoes:

In a pot, bring water with a pinch of salt to a boil. Boil potatoes, 10 min approx. To know if cooked through, poke them with a knife and lift it up: if the potato falls immediately, it’s done.
Drain and set aside.

The broccoli:

In a pot, bring water with a pinch of salt to a boil.
Cut broccoli into small florets and cook 5 min. Drain.
Puré broccoli with a hand-blender (or with a fork if you don’t have one). Season with salt and pepper and add a dash of olive oil. 

The salad:

Cut potatoes in half and chop parsley.
Mix in a bowl with Parmesan and a dash of oil. Season with salt and pepper.

The pork chops:

Fry the pork chops in a frying pan over medium heat until done.
Season with salt and pepper and add the thyme.
Touch the meat with tongs or spatula. If it is very soft, it is still raw in the middle. If it is extremely firm, it is very well done.
