Mustard pork chops with pear and mashed potatoes

The seeds of the mustard plant have never been consumed unprocessed and in its preparation the spice is completely transformed. Whole, ground, or crushed mustard seeds are mixed with water, vinegar, lemon juice, wine or other liquids, salt, and often other condiments and spices. It has potassium that is beneficial for our nervous system as well as for digestion and the musculature. It also contains phosphorus, vital for the functioning of the kidneys and the heart. Another benefit of mustard is its contribution of calcium, important for the health of bones and teeth.

Prepare the ingredients:

Peel and cut potatoes into large cubes.
Chop parsley.
Chop chili and remove the seeds (spicy!).
Peel and cut pear into wedges. 

Prepara los ingredientes - Chuletas de cerdo a la mostaza

The chicken broth:

Mix broth with ½ glass of hot water. 

The mashed potatoes:

Place potatoes in a pot and cover with water.
Bring to a boil and cook with the lid on for about 15 min until tender when pierced with a fork.
Drain and mash with a hand blender (or fork). Season with salt and pepper.
Add butter. Stir well.

The pork chops:

Heat a dash of oil in a frying pan. Add the pork chops and cook 2min / side. Add broth, chili, mustard and let simmer over low heat for 5-7 min until sauce has been reduced. 
When there are 3 min left (or the liquid has begun to reduce), add pears and parsley and let cook for the last minutes. Serve with mashed potatoes.
