Marinated pork chops with coleslaw

This salad probably has its origin in the periods of the Roman Empire. However, the modern coleslaw was born in the 18th century taking as its origin a word in Dutch: koolsla, an abbreviation of the phrase ‘kool salade’ that comes to mean coleslaw. Today accompanying marinated pork chops.

The pork chops I:

First of all, marinate the pork chops.
Mince garlic and ginger. In a bowl, mix with the soy sauce and marinate the pork chops for about 10 min while you prepare the coleslaw. Make sure to soak the chops with sauce all over.

The cole slaw:

Grate carrots and cut cabbage very finely. Mix yogurt with wasabi (very spicy, add to taste or omit).
In a bowl, mix carrot,  cabbage, yoghurt-wasabi mix, a drizzle of olive oil, and celery seeds. Squeeze over lime and season with salt and pepper. Stir well. Set aside while you cook the pork chops.

The pork chops II:

Heat a drizzle of oil in a frying pan. Cook the pork chops first over high heat and then, after 1 min,
lower over medium heat. Normally it take about 4 min / side, but it depends on your stove and the thickness of the pork chops. To see if they are ready, poke them with the tweezers, or spatula, to see how firm they are. If they are still very soft, it is because they are still raw in the center. If they are extremely firm, it means that they are very cooked.
When they are almost done, add the soy sauce and reduce the sauce in the same pan until it is almost sticky.

Your meal:

Serve the pork chops with coleslaw.
