Curry on red lentils and sweet potato with aromatic rice, lime and peanuts

The curry I:

Chop onion and tomato.
Peel sweet potato and cut into 1-2cm cubes.
Heat a dash of oil in a pot and sauté onion until golden brown. Add spice mix.
Stir well.

The curry II:

Add sweet potato, red lentils, stock cube, coconut milk, chopped tomato and a glass of water.
Let boil 20 min. Stir occasionally.
If necessary, add water so that it does not burn or remain dry. The curry should be liquid and creamy, but it’s not a soup!

The rice:

In a pot, place rice and water with a pinch of salt (2 cups of water for each cup of rice).
Boil covered for 10-15min, or until the rice has absorbed the water. 

Your meal:

Cut lime into wedges.
Chop peanuts.
Serve the curry with basmati rice.Finish with a sprinkle of chopped peanuts and the juice of a lime wedge.
