Couscous saladwith chickpeas and avocado

Mise en place:

Cut half of the oranges into wedges.
Squeeze the rest of the oranges.
Chop parsley.
Cut avocado into cubes and julienne onion.
Remove the pits from the olives and chop them.
(Optional) 

Mise en place - Ensalada de cuscus y garbanzos

The couscous:

Place one measure of boiling water for one measure of couscous in a bowl.
Add a drizzle of olive oil and season with salt and pepper.
Cover with a plate and set aside for 5 minutes. 

The chickpeas:

Drain chickpeas and mix with the couscous (separate the grains with a fork) 

The dressing:

Mix orange juice with tahini. 

The salad:

To the bowl with the chickpeas add black olives, onion, orange wedges, and avocado. Stir and season with salt and pepper.
Serve with spinach and finish with a drizzle of dressing and chopped parsley on top.
