Chimichurri hanger steak with mashed potato and roasted tomatoes

One of the most appreciated cuts of beef in Argentina is the hanger steak. It’s extremely juicy and comes out especially well grilled, it must be done over high heat so that it forms an outer crust, protecting the interior full of delicious and very tasty juices. The potatoes:

Put a pot with water and a pinch of salt to boil.
Peel potatoes and cut them into pieces.
Boil until tender when pierced with a fork, 10-15min. 

Las patatas - Entraña al chimichurri

The tomatoes:

Heat a dash of oil in a frying pan.
Fry tomatoes (whole) over medium heat 4-5 min.
Season with salt and pepper.
Set aside. 

The hanger steak:

Mix spices with a drizzle of oil.
Massage the meat with the mixture. Season with salt and pepper.
Heat up a frying pan and fry the meat to the desired point of doneness.
Remove from heat and let “rest” before cutting.  

The mashed potatoes:

Mix potatoes with butter (and if you have a dash of milk at home you can add that too if you wish).
Puree with a blender, fork, or hand blender.
Season with salt and pepper to taste. 

Your meal:

Serve hanger steak with mashed poatatoes and roasted tomatoes.
