Turmeric salmon and chickpea stew

Salmon is a fatty fish, rich in protein and omega 3. It is euryhaline, which means that it can live in water with high concentrations of salt. You can enjoy it with many different sides. This time we serve it with a flavourful chickpea stew. The special touch comes from the turmeric.

Mise en place:

Peel and cut sweet potato into small cubes.
Chop coriander.
Cut onion, garlic and bell pepper into brunoise (finely). 

Mise en place - Estofado de garbanzos y salmon

The stew:

Heat a dash of oil in a pot.
Sauté garlic, pepper, onion, and sweet potato for about 6-7 min until golden.
Season with salt and pepper.
Add chickpeas, coconut milk, soy, turmeric and half a glass of water*. Give it a stir and let boil covered over medium heat for 5 min.
Add coriander and cook 2 more min. Turn off the heat and set aside.

*) If during the cooking process you see that the stew gets dry, add a little water.  

The salmon:

In a frying pan, fry the salmon on both sides over medium heat to the desired point of doneness.
Season with salt and pepper.
You can see on the side of the fillet how the cooking line rises.

Your meal:

Serve the stew in bowls and finish with the salmon on top.
