Vegetarian feijoada with red beans and sweet potato.

With its origins in Rio de Janeiro, feijoada is a warm and tasty dish which has become a true delegate for Brazilians. Some claim it’s their national recipe. Can you resist it? With a multitude of ingredients, it is served on its own or as a side. Here in a vegetarian version and with red beans, which is the most common version in Portugal. Meal rich in antioxidants and proteins. #Vegetarian

The rice:

Put rice, water and a pinch of salt in a pot.
(2 cups of water for each cup of rice)
Bring to a boil and lower the heat to a minimum.
Boil covered 20 min until the rice has absorbed the water. 

El arroz

The sweet potato:

Peel and cut sweet potato in 1 cm cubes.
Boil in water, with a dash of salt, for 5 min.
Rinse and set aside. 

Prepare the ingredients:

Cut onion into julienne and slice garlic.
Cut zucchini into halfmoons.
Separate coriander leaves from the stems. Chop the stems.
Grind coriander seeds with the broad side of a knife. 

To the frying pan:

Heat a dash of oil in a skillet or large frying pan.
Add sweet potato, onion, garlic and zucchini. Sauté 8 min.
Add beans, paprika, coriander seeds, coriander stems, tomatoes and a glass of water. Season with salt and pepper.
Stir and mash the tomatoes a bit. Let boil 5-10 min. 

Tu plato:

Sirve con arroz, yogur y hojas de cilantro.
