Asian-style beef with stir-fried pak choi

Shichimi tōgarashi, or simply shichimi, is a typical condiment in Japanese cuisine. It literally means chili of seven flavors, because it is a mixture of spices: chili powder, roasted tangerine skin, black and white sesame seeds, poppy seeds, Sichuan pepper, ginger, and nori.It’s a spicy condiment that can be added to soups, noodles, rice, fish, meat... it is more and more used in Western cuisine, especially in fusion style recipes.

The vegetables:

Chop coriander and garlic.
Peel and mince ginger.
Slice chili into thin slices.
Cut onion in julienne.
Cut pak choi into quarters.
Squeeze lime (saving some segments for the presentation of the dish).

The beef:

Cut beef into strips.
In a bowl mix soy sauce, lime juice, half the coriander, half the ginger, shichimi and half the garlic.
Add the meat and mix.
Let sit.  

The stir-fry I:

Heat a dash of oil in a frying pan. Add onion and sauté over high heat.
Add garlic, ginger and chili (hot, add as much as you like). Sauté some more.
Add pak choi and peanuts. Season with salt and pepper. Set aside.  

The stir-fry II:

In the same frying pan add beef and sauté over high heat until cooked.
Add the sautéed vegetables.
Finish with chopped cilantro on top and a lime wedge on the side of the plate.
