Fusilli al forno pasta bake with soy mince the Italian way

Prepare the ingredients:

Heat the oven to 225ºC and put soy mince to soak in a
bowl with water.

Peel and mince garlic.
Peel and chop shallots.

Prepara los ingredientes - Fusili al forno

Soy mince:

Drain soy mince.
Heat up oil in a frying pan and cook 4-5 min. 

The pasta:

Meanwhile, bring salty water to a boil and add fusilli.
Cook, uncovered 10-12 min.
Reserve 1 cup of pasta water, then drain.  

Back to the frying pan:

Add shallots, garlic and spicy paprika. Cook 3-4 min.
Add crushed tomatoes, balsamico, sugar and season with salt and pepper. Let simmer 8-10 min. 

Let's mix it up:

To the sauce, add fusilli, spinach and reserved pasta water. Stir until spinach wilt, 1-2 min. Season with salt and pepper.
Pour it all into a baking dish and top with mató and grate mozzarella over it all.
Broil in the middle of the oven until the cheese melts and turns golden, 4-5 min. 

Serve with fresh basil.
