Cypriot grill cheese with caramelized aubergine and sweet potato pure

Aubergines grow in a manner much like tomatoes, hanging from the vines of a plant that grows several feet in height. The modern aubergine owes its origin to the wild version that is native to South East Asia. Prior to the Middle Ages, it was introduced in Africa before spreading throughout Europe and the Middle East. For centuries, aubergines were enjoyed more as a decorative garden plant than as a food due to its bitter taste. Today it’ll be the backbone of a delicious stir-fry accompanying grilled halloumi. #VEGETARIAN

The vegetables:

Peel and cut sweet potato into cubes.
Slice cheese.
Cut bell pepper into triangles.
Cut aubergine into cubes.

The pure:

Place sweet potato in a pot and cover with water. Bring to a boil and cook for about 10-12 min until tender when pierced with a fork.
Drain and mash with a hand blender or a fork.
Add a tablespoon of olive oil. Season with salt and pepper. 

The cheese:

Heat up a frying pan and brown slices of cheese on both sides. 

The stir fry:

Heat a dash of oil in a frying pan.
Add aubergine, bell pepper and sauté until golden.
Season with salt and pepper.
Remove vegetables and add 5 tablespoons of water, balsamic vinegar, honey and bring to a boil to evaporate part of the liquid. 

Your meal:

After preparing your plate with puree, stir fried vegetables and cheese, finish with pumpkin seeds and juice from the frying pan on top.
