Oven baked Cypriot cheese with bulgur salad

Very popular in Middle Eastern cuisine, bulgur is obtained from wheat. It is a good source of carbohydrates and provides a large amount of energy. Another of its main characteristics is that it has a low glycemic index and slows down the absorption of sugar in the blood. In addition, it is rich in fiber and protein and low in fat. #Vegetarian

The oven:

Preheat the oven to 180ºC, heat above and below.

The cheese:

Cut cheese into slices.
Spread sesame seeds on a baking tray.
Place cheese over the seeds so that they stick to it on both sides. Bake for 8 min at 180ºC. Cover the cheese slices with honey and bake another 6 min at 200ºC.

The bulgur:

In a pot, place bulgur and 2 measures of water for 1 of bulgur. Season with salt and pepper. Bring to a boil and lower the heat to a minimum. Boil covered for about 10 minutes until the water has been absorbed. 

Mise en place:

Cut scallion at an angle.
Cut cherry tomatoes in half.
Chop mint and parsley.
Cut red onion into julienne.
Cut lemon into wedges. 

The salad:

Pour the cooked bulgur into a bowl. Add mint, parsley, tomatoes, and onion. Mix well. Finish the dish with cheese, scallion and lemon squeezed on top.
