Chickpea masala with basmati rice, juicy dates and fresh mint

The rice:

In a pot, combine rice with the double amount of water (1 cup rice + 2 cups water) and a pinch of salt.
Cook at low heat for 12-15 minutes, or until the water has been absorbed.

Mis en place:

Cut onion into julienne and chop tomato and carrot.
Chop dates and separate mint leaves from the branches.
Mince garlic and ginger.

To the pot:

Sauté cumin seeds, onion and carrot: 3-4 min.
Add ginger, garlic and tomato. Sauté 1-2 min more. 

Your curry:

Add spices (spicy! You can add some here and the rest after trying), chickpeas and yoghurt.
Let heat up for a few minutes until the gravy is thick.
Season with salt and pepper.

Your meal:

Serve with rice and sprinkle dates and mint leaves on top.
