Baked chicken thighs with sautéed cabbage and apple

Star anise is an ingredient in the traditional five-spice powder of Chinese cuisine. It is also one of the ingredients used to make the broth for the Vietnamese noodle soup called phở. Star anise contains anethole, the same active ingredient that gives anise its flavor.

The oven:

Preheat the oven to 200ºC, heat above and below.

The chicken:

Mix honey, sumac, sweet paprika, and 4 tablespoons of olive oil. Soak chicken on all sides with half of the marinade. Season with salt and pepper. Bake in the oven until done. When cut, the juice will be transparent, if it is pink you have to leave it in a little longer. (Save half of the marinade for the stir-fry.)

Mis en place:

Peel and cut apple into thin slices.
Cut red cabbage and onion into julienne. 

The stir fry:

Heat a dash of oil in a frying pan.
Add onion, red cabbage and sauté over medium heat for 5 min. Add apple, star anise, vinegar, rest of the marinade and cook for about 5 min.

Your meal:

Serve chicken thighs with red cabbage and apple stir-fry.
