Coriandrum sativum, or coriander, is an aromatic herb that belongs to the apiaceae family. Its stem can become very tall, up to 40-60cm. Its origin is unknown, but there are theories that place it in the eastern Mediterranean and the Middle East where a warm climate could have been just perfect for it to grow wild. The pasta:

Heat water with a pinch of salt in a large pot. Once it starts to boil, add the pasta.
Let boil for 8 -10 min according to taste.
Drain and save a cup of the cooking water. 

La pasta - Tagliatelle con tomate y cilantro

The vegetables:

Chop almonds.
Peel and slice garlic.
Cut cherry tomato in half.
Cut sundried tomatoes into smaller pieces.
Chop coriander. 

The sauce:

Heat a frying pan and toast the almonds. Set aside.
Heat a dash of oil in the frying pan and fry garlic and cherry tomato until golden.
Add sundried tomato, cream cheese, Parmesan cheese and tagliatelle + a little cooking water to regulate the creaminess. Add coriander and mix well.
Season with salt and pepper. 

Your meal:

Serve the pasta and finish with almonds on top.
