Onglet steak with Indian rice and broccoli

Basmati rice has its origins in India and Pakistan, and we recognise it for its fragrant smell. It is a long grain rice rather than wide. The name in Hindi means queen of fragrances. Today we accompany it with a cut of beef to enjoy this variety of Asian rice.

The rice I:

Put rice, water and a pinch of salt in a pot.
(2 cups of water for each cup of rice)
Add turmeric and cardamom.
Bring to a boil and lower the heat to a minimum.
Boil covered 10-15 min or until the rice has absorbed the water.

The broccoli:

Cut the broccoli into florets.
In another pot, bring water with a pinch of salt to a boil.
Boil broccoli 3min.
Drain, season with salt and pepper. Add a dash of oil. 

The onglet:

Fry in a frying pan, with a dash of oil, or prepare on the grill to the desired doneness. (3 min/side aprox)
Season with salt and pepper. 

The rice II:

Chop coriander and add to the rice.
Mix well and serve your meal.
